Ingredients

  • 500 g spelled flour (type 630)
  • 350 ml water, lukewarm
  • 2 teaspoons salt
  • 1 packet dry yeast or fresh yeast as appropriate
  • 150 g rains, mixed (e.. sunflower seeds, pumpkin seeds, flax seeds, sesame seeds, oatmeal, nuts, etc.)
  • Flour for the bowl

Instructions

  1. Mix the flour with the yeast, mix in the mixed grains and kernels and the salt with the food processor and gradually add the lukewarm water. Knead the dough for at least 5 minutes. It shouldn`t be too sticky and should detach itself easily from the edge of the bowl.
  2. Now place the dough in a floured bowl, cover and let rise in a warm place until the volume has increased nicely. This takes about 1 - 1.5 hours. Now line a loaf pan with baking paper.
  3. Use a spatula to fill the nicely risen dough into the laid out pan. Caution, the dough can now stick a little stronger, this is also normal. It no longer has to be kneaded. If you like, you can now sprinkle a few more grains on top.
  4. Bake in the preheated oven at 200 ° C (top / bottom heat) for about 45 minutes, depending on how brown you like it. Let the finished bread cool on a rack.
