Ingredients
- 80 g sunflower seeds
- 80 g sesame seeds
- 80 g flaxseed
- 250 g water, hot
- 750 g wholemeal spelled flour
- 12 g sea salt
- 42 g fresh yeast or 14 dry yeast
- 1 teaspoon sugar
- 500 g water, lukewarm
- 3 tablespoon apple cider vinegar
- Butter or margarine for the mold

- Put the sunflower seeds, sesame seeds and flax seeds in a large bowl and pour hot water over them. Close the bowl with a lid and leave the grains to soak, preferably overnight.
- Add the wholemeal spelled flour and salt to the bowl with the soaked grains and mix everything together.
- Put the yeast with the sugar in a beaker and gradually add 500 g of lukewarm water until the yeast has completely dissolved. Finally, add apple cider vinegar to the yeast water and add everything to the flour in the bowl. Using a hand mixer, mix all the ingredients with the dough hook to make a homogeneous dough.
- Cover the dough and let rise for two hours at room temperature.
- Grease a large bread pan with butter or margarine, pour the dough into the baking pan and let rise for another two hours.
- Put the dough in the cold oven and bake at 200 ° C top / bottom heat for about 60 minutes. Remove the bread from the mold and bake for another 10 to 15 minutes without a baking pan.
- Let the finished bread cool on a rack.
- The baking time varies depending on the oven and baking pan. If necessary, prick the bread with a wooden stick to check whether the dough sticks to it. In this case, bake the bread a little more.
