Ingredients

  • 500 g fish fillet (s), e.. pollack, cod or salmon
  • 2 tablespoon lemon juice
  • some salt and pepper
  • 150 g tomato (s)
  • 4 spring onion (s)
  • 3 clove (s) garlic
  • 200 g sheep cheese
  • 1 sprig thyme, fresh
  • 70 g olives, black, pitted
  • 2 tablespoon olive oil

Instructions

  1. Sour the cleaned fish with the lemon juice, pepper and salt.
  2. Roughly dice the tomatoes, cut the spring onions into rings and chop the garlic. Crumble the sheep`s cheese and mix with the diced tomatoes, spring onions, garlic and olives.
  3. Grease a baking dish with olive oil and place the fish fillet in it. Put the sheep`s cheese and vegetable mixture on top. Remove the thyme leaves from the branch and sprinkle over them.
  4. Bake the whole thing in a preheated oven for 30-35 minutes at 200 ° C.
  5. Serve with fresh baguette and a crunchy salad. Maybe a dry white wine and the summer evening is almost perfect.
