Ingredients

  • 500g flour
  • 175 g syrup
  • 175 grams sugar
  • 175 g butter, or mararine
  • 100 g lemon peel
  • 100 g almond (s)
  • 1 teaspoon, leveled cinnamon powder
  • 1 teaspoon, leveled clove powder
  • 1 pinch cardamom powder
  • 1 point baking soda

Instructions

  1. Finely grind the almonds with the drum grater. Since I don`t like to bite on lemon peel, I also spin it through the drum grater.
  2. Knead all the ingredients one after the other. The dough is very dry. That`s why I lightly moistened my hands with water 3 times and kneaded it nicely. Roll out the dough and cut out with shapes as desired. Bake for 12-15 minutes. I have gas, i.e. at 160 degrees. Electric oven approx. 180-195 degrees.
  3. The cookies are very crispy and crispy, I like them.
  4. I found the recipe Helgoländer Schnitten as a handwritten note in a baking book. I bought it at a flea market. Now I was curious what these Heligoland slices were all about and I baked them again.
