Drain the matjes fillets and place them on kitchen paper so that the oil can be soaked up.
Put the sour cream in a bowl (if possible a bowl with a lid) and stir with salt, pepper and sugar until creamy. Cut the onion, apples and cucumber into 1 cm cubes and add to the sour cream. Finally, cut the matjes fillets into bite-sized pieces and add them. Stir everything well and then cover and place in the refrigerator for 12-24 hours. As a variation, you can stir in fresh or frozen dill.
Boil the potatoes as jacket potatoes and enjoy with the herring tip.
