Ingredients

  • 20 g butter
  • 20 g suar
  • 1 apple, peeled, cut into wedges
  • 30 g almond (s), chopped
  • 30 g raisins
  • 150 grams flour
  • 0.25 liter ¼ milk
  • 3 egg yolks
  • 20 g butter, soft
  • 3 egg whites
  • 20 g suar
  • Icing sugar for sprinkling
  • a bit salt

Instructions

  1. Melt the first 20 g butter in a (if possible coated) pan over medium heat. Add 20 g sugar and dissolve in it while stirring constantly. Now add the prepared apple wedges, turn up the heat and caramelize the fruit wedges a little. Now add the almonds and raisins and set the heat to the lowest level for now.
  2. In the meantime, stir the flour and milk in a bowl until smooth. Stir in the three egg yolks, then fold in the softened butter and a little salt. Beat the three egg whites with the remaining sugar separately until stiff and then carefully fold them into the dough with a whisk.
  3. Now set the heat under the pan back to medium level and pour the finished dough onto the apple wedges. After approx. 4 minutes the dough is set and can be pulled apart with 2 forks. Dust the Schmarrn immediately with powdered sugar as required and serve immediately.
