Lagman with Lamb and Tortillas

Prepare a lagman for a home holiday or weekend when the whole family gathers around the table. The peculiarity of this recipe is that flat cakes are used instead of stretched noodles.

Servings: 4

Ingredients

  • Lamb – 400 g
  • Potatoes – 2-3 pcs.
  • Bulgarian pepper – 1 pc.
  • Carrots – 1 pc.
  • Bulb onions – 2 pcs.
  • Tomatoes – 1-2 pcs.
  • Radish – 1 pc.
  • Tomato juice – 1.5 cups
  • Garlic – 2 cloves
  • Green onions – 2 pcs.
  • Cilantro – 4 branches
  • Parsley – 3 sprigs
  • Chile – 0.5 pcs.
  • Salt to taste
  • Sugar to taste

    For the test:

  • Chicken egg – 1 pc.
  • Wheat flour – 120 g
  • Salt – 1 pinch

How to cook lagman with tortillas:

Directions

  1. Cut the lamb into medium pieces.
  2. We send a lamb to the pan and fry until the pieces are slightly browned.
  3. While the lamb is fried, prepare the lagman dough.
  4. We shake the egg with salt, pour in a couple of tablespoons of water. Add flour and knead the dough. (You may need more or less flour. It all depends on the moisture content of the flour, on the size of the egg.)
  5. Let the dough stand for about 15 minutes. Then form the sausage, cut it into pieces.
  6. Form small cakes, leave them to dry a little.
  7. Dice the onion, carrots, bell peppers, and tomatoes.
  8. First, we send onions to the fried lamb.
  9. After about five minutes, put the carrots in the pan. Let’s salt.
  10. After another five minutes, add bell peppers, tomatoes, and tomato juice. Add sugar to remove the acid.
  11. While the vegetables are stewing, coarsely chop the potatoes, cut the radish into smaller cubes.
  12. Put the potatoes and radish in the pan. Cook until potatoes are tender.
  13. Put the dough cakes on top of vegetables and meat. The dough will be steamed. Reduce heat to low and cook covered for 3-5 minutes.
  14. The scones are ready.
  15. Cut the greens of cilantro, parsley, green onions, cut the garlic into slices.
  16. Sprinkle the lagman with cakes with herbs and turn off the heat.
