Ingredients

  • 2 leeks
  • 2 spring onion (s)
  • 1 large potato (s)
  • 50 g raw ham, diced
  • 1 red pepper (s)
  • 1 teaspoon, heaped clarified butter
  • salt and pepper
  • 2 teaspoons sugar
  • Paprika powder, noble sweet
  • 1 dash milk
  • 1 squirt lemon juice
  • nutmeg

Instructions

  1. Peel the potatoes and cut into small cubes, cut the leek and spring onions into rings, and cut the peppers into cubes.
  2. Heat the clarified butter in a high pan and fry the potatoes briefly in it and then add the ham cubes. After 10-15 minutes add the leek rings, paprika and spring onions and sauté everything over medium heat. Season with salt, pepper, paprika, nutmeg, sugar and lemon juice. When the leek is slowly softening, deglaze everything with a good dash of milk.
  3. When the potatoes are cooked after about 20 minutes, season to taste and serve.
  4. If you like, you can let it simmer a little longer, but I like it more firm to the bite.
