Thaw the leek a little and chop finely, sprinkle all the ingredients on it up to and including pepper and wait until the leek is completely thawed. Then mix with the buckwheat. Thawing means that there is enough liquid, you don`t have to add any more water. Mix everything, you have to create a malleable dough. If fresh leeks are used, some water is needed.
Shape the dough into patties and fry them on both sides in hot olive oil, reduce the heat, cover the pan if possible and cook the patties in about 15 minutes.
I prepared the dough early in the morning, so shaping it at noon was no problem.
