Ingredients

For the dough:

  • 4 egg (s)
  • 1 pinch (s) salt
  • 50 g xylitol (suar substitute) or liquid sweetener
  • 2 tablespoon buttermilk
  • 1 splash lemon or lime juice
  • 80 g almond flour
  • 1 teaspoon Baking powder

For the filling:

  • 150 ml cream
  • 100 g cream cheese
  • 100 g berries (blackberries, raspberries, strawberries, frozen)
  • Xylitol (sugar substitute) or liquid sweetener

Instructions

  1. Preheat the oven to 170 ° C (top / bottom heat). Beat the eggs until creamy. Add the buttermilk and season with xucker and lemon. Now add the remaining ingredients and mix everything together well.
  2. Line a baking sheet with parchment paper and distribute the mixture on top. Smooth out the dough and place in the oven for 15 minutes. Then let the base cool down a bit.
  3. For the filling, whip the cream until stiff, then carefully stir in the cream cheese and xucker. Heat the frozen berries in the microwave and press them flat with a spoon or puree with the blender. Possibly sweeten.
  4. Brush the bottom with the cream, then with the berries and roll up. Place in the refrigerator for at least an hour.
