For the soufflé, drain the tuna and chop it up in a bowl. Add the cottage cheese and grated cheese. Chop the onion very finely and mix it with the tuna and cottage cheese mixture.
Separate the eggs, beat the yolks with salt and pepper and mix them into the tuna mixture. Season with salt, pepper and thyme.
Beat the egg white with salt until stiff and fold into the tuna mixture.
Bring a cup of water to the boil.
Pour the soufflé mixture into greased casserole dishes. Immediately place in the microwave along with the cup of water.
Cook for 10 minutes at full power. Then pour some grated cheese over it and bake for 6 minutes on the grill setting. Serve hot.
My tip: A green salad and a fresh white wine or a glass of water with a splash of lime juice go well with this.
