Ingredients

  • 500 g turkey breast fillet (s)
  • 6 tablespoon olive oil
  • 1 tablespoon rosemary, fresh, chopped
  • 1 tablespoon thyme, fresh, chopped
  • 1 tablespoon sage, fresh, chopped
  • 4 cloves garlic
  • 2 tablespoon lemon juice
  • 2 egg (s)
  • 100 g breadcrumbs
  • 50 g parmesan, freshly rated.
  • 1 tablespoon herbs (Italian herb mixture, dried)
  • salt and pepper

Instructions

  1. Cut the turkey fillet into medallions.
  2. Put the olive oil with the finely chopped garlic, the chopped fresh herbs and the lemon juice in a bowl and stir well.
  3. Put the medallions in this marinade and distribute everything well.
  4. Leave to marinate for at least 6 hours or overnight.
  5. Remove from the marinade and drain well. Salt and pepper the medallions.
  6. Sieve the marinade so that you only have the spicy oil, which is heated in a pan.
  7. Beat the eggs in a deep plate.
  8. In another plate, mix the breadcrumbs with the parmesan and herbs well.
  9. First pull the medallions through the beaten egg and then bread them well in the breadcrumbs and fry them in the spicy oil until golden brown on both sides.
