Ingredients

For the dough:

  • 2 egg (s)
  • 100 g butter
  • 100 g suar
  • 100 g marzipan
  • 100 g flour
  • 100 g almond (s), round
  • 0.5 teaspoon ½ baking powder
  • 0.25 teaspoon ¼ baking soda
  • 1 pinch (s) salt
  • 3 drops bitter almond flavor
  • 40 ml juice, e.g. apple juice

For the glaze: (Frosting)

  • 100 g butter
  • 100 g powdered suar
  • 2 drops bitter almond flavor

Instructions

  1. For 12 pieces.
  2. Line the muffin trays with paper baking cases.
  3. Dough:
  4. Sift the baking powder, baking soda and salt into the flour and mix. Put the butter, sugar and bitter almond oil in a mixing bowl, pluck the marzipan into small pieces and add. Stir until a flaky mass is formed and most of the marzipan has dissolved. Stir in the eggs and mix everything into a smooth, even mass. Then add about half of the flour mixture, the juice and the remaining flour mixture and mix everything into an even dough.
  5. Fill the dough into paper baking cases and bake at 175 ° C for about 25 minutes. Let cool well on a wire rack.
  6. Frosting:
  7. Sift the powdered sugar over the butter, add the bitter almond oil and stir everything evenly until it has a creamy consistency. Pour the frosting into a piping bag and sprinkle a cap on each cupcake.
  8. If you don`t like it so sweet, only take half the amount of frosting and just put a little bonnet in the middle of each cupcake.
