Meat Casserole with Zucchini and Tomatoes

Juicy minced meat casserole with zucchini, tomatoes, and cheese in egg and sour cream filling is a great dish for a family lunch!

Ingredients

  • Minced meat – 300 g
  • Zucchini – 400 g
  • Tomatoes – 2 pcs.
  • Hard cheese – 100 g
  • Bulb onions – 0.5 pcs.
  • Sunflower oil – 30 ml
  • Eggs – 2 pcs.
  • Sour cream – 100 g
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Peel the onions and cut them into small cubes.
  2. Heat the sunflower oil in a skillet. Place the chopped onions and minced meat in the skillet.
  3. Season with salt and black pepper to taste. Fry the minced meat with onions over high heat until the color changes, about 7 minutes. Remove the pan from the stove.
  4. Rinse the zucchini, trim the edges and, if necessary, peel with a vegetable peeler.
  5. Add a pinch of salt to the grated zucchini, stir and leave for 5 minutes. Then squeeze the juice out of the zucchini.
  6. Turn on the oven, let it heat up to 200 degrees. Place half of the grated zucchini in a baking dish. Top with minced meat fried with onions.
  7. Cover a layer of minced meat with the second part of the courgette mass. Rinse the tomatoes, remove the stalks, and cut them into thin slices.
  8. Place the tomato slices on top of the squash layer. Now prepare the fill. In a bowl, combine sour cream, eggs, salt, and black pepper to taste. Shake the eggs and sour cream with a fork until smooth.
  9. Pour the resulting egg and sour cream mixture over the layers of the casserole. Grate the hard cheese on a coarse grater and cover the surface of the casserole. Place the pan in a preheated oven and cook the minced meat casserole with courgettes and tomatoes for 25-30 minutes.
  10. Meat casserole with zucchini and tomatoes is ready. Cut the meat casserole into portions and serve hot or warm.
