Brew 4 cups of strong coffee. Heat the milk. Pluck the leaves from 8 stalks of mint, finely chop with sugar in a mortar or lightning chopper.
Froth the milk. Pour the coffee into 4 glasses, stir in 1 teaspoon of mint sugar. Spread the milk foam on top to form a hood, garnish with the rest of the mint. Serve with the remaining mint sugar.
