Norwegian Salad with Herring and Tomatoes

A savory salad with herring, potatoes and tomatoes is prepared with a fragrant dressing of olive oil, garlic and thyme.

Ingredients
- Salted herring – 0.5-1 pcs.
- Potatoes – 2 pcs.
- Tomato – 1 pc.
- Bulb onions – 0.5 pcs.
- Garlic – 1 clove
- Fresh thyme – 2-3 sprigs
- Olive oil – 3 tbsp
- Salt to taste
- Ground black pepper – to taste
Directions
- Let’s prepare food for the herring and tomato salad. Boil the potatoes “in their uniforms” and cool them. Peel the vegetables.
- First, let’s prepare the salad dressing. Pour the olive oil into a bowl, squeeze the garlic into the oil through a press. Tear off the thyme leaves and add them to the dressing. Season with pepper and salt. Let the salad dressing brew for 40-60 minutes.
- We cut the salted herring, for this we clean the fish from skin and bones.
- Put boiled potatoes cut into cubes in a salad bowl.
- Dice the herring fillet and add to the potatoes.
- Cut the fresh tomato into cubes and add to the fish salad.
- Slice the onion very thinly, rinse with cold water, removing the bitterness. Add the onion to the tomato, herring and potato salad.
- Pour the herring and tomato salad with the prepared dressing. Mix salad, season with pepper and serve.
