Ingredients

  • 800 g minced beef
  • 150 g apricot (s), dried
  • 2 bunch spring onion (s)
  • 1 onion (s), diced
  • 75 g cashew nuts
  • 3 egg (s)
  • 50 ml vegetable stock, (instant)
  • 2 chilli pepper (s), red, finely chopped
  • 1 roll, from the day before
  • 1 tablespoon sherry, drier
  • 3 cloves garlic, pressed
  • 0.5 teaspoon Β½ cinnamon
  • 2 pinches clove (s), ground
  • 0.5 teaspoon Β½ ginger, freshly grated
  • 2 teaspoons honey, liquid
  • salt
  • pepper
  • Oil, for frying and brushing

Instructions

  1. Cut 5 apricots into wedges, dice the rest. Mix the sherry with 50 ml of warm water, marinate the apricots in it. Soak the rolls in warm water.
  2. Clean and wash the spring onions and cut into 6-10 cm long pieces. Roast the nuts in a pan without fat, let them cool and chop finely.
  3. Squeeze out the rolls and tear them apart. Knead into the minced meat with the chilli, onion, garlic, apricot cubes, nuts and eggs. Season with cinnamon, cloves, ginger, salt and pepper.
  4. Shape the mixture into an elongated loaf and place in an oiled roasting pan. Brush with oil and cut crosswise. Cover with apricot wedges decoratively.
  5. Bake in the preheated oven at 200 degrees for about 45 minutes. 10 minutes before the end of the cooking time, add the spring onions and stock and sautΓ©. Brush the roast with honey and finish cooking.
  6. Lemon sauce goes well with it. Couscous and sheep`s cheese are ideal as a side dish.
