Ingredients

  • 40 g parmesan cheese
  • 3 egg (s)
  • 1 dash milk
  • Oregano, dried
  • Basil, dried
  • salt
  • 100 g cocktail tomatoes
  • 3 slices Parma ham
  • 1 handful rocket
  • pepper
  • some olive oil

Instructions

  1. Coarsely grate the parmesan.
  2. For the omelette, mix the eggs with the milk, half of the parmesan, oregano, basil and a pinch of salt. Quarter the cherry tomatoes.
  3. Pour the egg mixture into a pan with olive oil. Then spread a couple of tomato quarters on top. Let set over medium heat for approx. 5 minutes, then turn carefully and let set again for 5 minutes.
  4. In the meantime, wash and sort the rocket. You can either leave the ham whole or roughly cut it.
  5. Arrange the finished omelette on a plate, then arrange the remaining tomato quarters, ham, rocket and the remaining parmesan on top. Finally sprinkle some pepper from the grinder on top.
  6. Vegetarians can also leave out the ham.
