Sieve the flour on a work surface, make a well and add the eggs. Put the cold butter in flakes on the flour. Add the grated parmesan, coarsely ground pepper and salt. Quickly knead all ingredients with your hands from the outside to the inside to form a smooth dough. Wrap the dough in cling film and place in the refrigerator. Let rest for at least 1 hour.
Roll out the dough on a floured work surface approx. 5 mm thick and cut out stars. Brush these with the beaten egg and sprinkle with the pine nuts. Line a baking sheet with parchment paper and place the stars on it. Preheat the oven to 180 ° C. Bake the stars for about 12-15 minutes.
At the end of the baking time, take the parmesan stars out of the oven and let them cool on a wire rack. Keep the Parmesan stars in a cookie tin until you can eat them.
