Ingredients

  • 500 g pasta (e.. penne)
  • 100 g tomato (s), dried, pickled
  • 100 g olives, black, seedless
  • 2 cloves garlic
  • 200 g sheep cheese or feta, with or without herbs
  • 8 tablespoon balsamic vinegar
  • 8 tablespoon tomato paste
  • 16 tablespoon olive oil
  • 4 tablespoon water
  • salt and pepper

Instructions

  1. Cook pasta al dente. Chop tomatoes and olives,
  2. Dice the sheep`s cheese. Mix together tomato paste, vinegar, oil, water and pressed garlic. Season with salt and pepper.
  3. Mix the ingredients together, pour the marinade on top, cover and let stand for 2-3 hours, stirring occasionally. Season to taste again before serving, if necessary a little more seasoning.
