Pineapple Ceviche with Scallop

Ceviche (Spanish “ceviche”) is a popular snack in many countries of Central and South America. Ceviche is made from finely chopped raw fish or seafood that is marinated in lemon or lime juice.

Ingredients

  • 0/14 ingredients0.5 teaspoon Tabasco sauce
  • 1 clove of garlic
  • 1 small ripe pineapple
  • 1 medium cucumber
  • 1 teaspoon soy sauce
  • 100 ml lemon juice
  • 180-200 g scallop fillet of the same size
  • 1-2 cm
  • 2 cm fresh ginger root
  • 4 cherry tomatoes
  • cilantro> For the sauce:
  • half a medium red onion
  • salt,
  • black pepper

Directions

  1. For the sauce, peel and chop the ginger and garlic. Beat all ingredients of the sauce with a blender until smooth.
  2. Chop the onion very thinly and rinse under cold running water, 10 minutes.
  3. Peel the pineapple, remove the core, cut the pulp into cubes with a side of 1.5–2 cm.
  4. Also, cut the scallop fillet. Chop the cucumber and cherry tomatoes very finely.
  5. Put all the prepared ingredients in the sauce and leave for 5 minutes.
