Ingredients
For the dough:
Flour – 175 g + for working with dough
Water – 150 ml
Salt – 2 pinches
Pressed yeast – 5 g
or dry yeast – 1 teaspoon without a slide
Vegetable oil – 1 tbsp + for working with dough
For filling:
Champignon mushrooms – 1-2 pcs.
Hunting sausages – 2 pcs.
Mozzarella cheese – 200 g
Hard cheese – 50 g
Bulb onions – 1 pc.
Pitted olives – 8 pcs.
For the sauce:
Garlic – 1 clove
Dried Italian herbs – 1 teaspoon
Tomato sauce – 100 g
Salt – 1 pinch (to taste)
Sugar – 1 pinch (to taste)
Vegetable oil
Directions
We heat the water to a warm state (37-40 degrees).
To test the yeast, we make a quick dough. To do this, make a depression in the flour and pour warm water into it and crumb the yeast. Leave the dough to come up in a warm place for about 15 minutes.
Add warm vegetable oil and salt to the matched dough. Mix well.
Knead the dough on the table. The dough will stick slightly, so grease your hands with vegetable oil. Don’t stuff the dough with excess flour! Cover the bowl with the dough with cling film or a damp towel. We send for proofing in a warm place for 40-60 minutes.
Cooking pizza sauce. I always try to make homemade tomato sauce. In a saucepan, heat a little vegetable oil and fry the garlic squeezed through a press for a couple of seconds. Stir constantly. Do not let the garlic turn brown so that it does not taste bitter. Then add the Italian herbs and fry for a few more seconds. We mix.
Add tomato juice, salt and sugar to taste to the saucepan. Stirring constantly, boil the sauce to the desired thickness. Preheat the oven to 200 degrees.
Lightly knead the dough on a floured table surface. Cut off 1/3 of the dough. Roll out the dough into a thin cake.
We bake the cake in the oven at a temperature of 200 degrees for 5 minutes, until golden brown. Focus on your oven for baking times. In a preheated oven, the dough begins to bubble, appetizing and delicious! Take the pizza cake out of the oven and let it cool for a few minutes.
While the cake is cooling, we prepare the products for the filling. You can use whatever you love. The main thing is to take more cheese.
Roll the remaining dough into a cake larger in diameter than the baked cake. Put most of the mozzarella cheese on the dough and distribute, a little short of the edges. Place the baked tortilla on the cheese, bubbles down, and press lightly. We wrap the edges. The result is a base for a double bottom pizza. You can brush the edges of a large cake with water so that it sticks well.
Rub the cheese on a coarse grater. Cut the sausage and mushrooms into slices. Cut the onion and olives into rings. I like onions and champignons and use raw ones. You can pre-fry.
Next, as usual – sauce and filling. Lubricate the pizza base with tomato sauce.
Put chopped onions, mushrooms, sausages, olives and cheese (hard and remaining mozzarella) on the sauce one by one.
We bake pizza in a preheated oven for 15-20 minutes.
