Plum Cupcakes

Everyone will love the plum-filled muffins because they are so soft and delicious.

Servings: 6


  • For 12 cupcakes:
  • Eggs – 3 pcs.
  • Sugar – 125 g
  • Vanilla sugar – 1 sachet (10 g)
  • Salt – a pinch
  • Butter – 80 g
  • Cognac (do not add for children) – 3 tbsp
  • Flour – up to 300 g
  • Baking powder – 2 teaspoon
  • Plums – 300 g
  • Powdered sugar – 1 tbsp


  1. Separate the egg yolks from the whites. Beat egg yolks with granulated sugar and vanilla sugar.
  2. Melt the butter, cool and mix with the cognac. Add to whipped yolks.
  3. Sift flour with baking powder and gradually add to the whipped mass. Beat the whites and carefully combine with the dough.
  4. Wash the plums, cut each in half and remove the pit. Leave 6 halves, and cut the rest into cubes and mix with the dough. Cut the remaining plums into thin slices.
  5. Grease muffin cups with butter or place paper cups in them. Fill them with dough 2/3 of the volume. Squeeze several slices of plums into the dough from above. Bake muffins with plums for 30-40 minutes in an oven preheated to 180 degrees. The time depends on your oven and the size of the muffins.
  6. Let the muffins cool slightly, remove from the mold and sprinkle with powdered sugar.
  7. Plum muffins are ready. Bon Appetit!
