Pocket Buns with Smoked Meats, Vegetables and Cheese

A delicious idea that has helped out on the road more than once! Take any filling, whatever you love! The dough is easy to prepare and tastes amazing! Always welcome – to school, for a picnic or just have tea!

Ingredients

For the test:

  • Flour – 320 g
  • Pressed yeast – 5 g
  • or dry yeast – 1 teaspoon
  • Egg – 1 pc.
  • Milk – 180 ml
  • Sugar – 1 tbsp
  • Salt – 1 pinch
  • Butter – 20 g

For filling:

  • Bulb onions – 1 pc.
  • Hunting sausages – 2 pcs.
  • Ham – 100 g
  • Potatoes – 2 pcs.
  • Sweet pepper – 1/4 pc.
  • Hard cheese – 100-150 g
  • Vegetable oil – for frying

For lubrication:

  • Yolk – 1 pc.
  • Milk – 1 tbsp

Directions

  1. For any baking, I advise you to prepare all products in advance. That is, everything should be on the table and at room temperature. Heat milk for dough a little (up to 37-40 degrees).
  2. We activate the yeast (quick brew). In a bowl in flour, make a depression, pour warm milk into it, add sugar and crush yeast. Mix milk with yeast and sugar. Let the dough stand for 10 minutes in a warm place.
  3. Then add the rest of the ingredients. We drive in the egg. Pour in salt. We mix.
  4. Add the butter last to the dough. Knead soft dough.
  5. Knead the dough on the table, put it in a bowl and cover with cling film. We send the dough to a warm place for proofing, for 40-60 minutes.
  6. Preparing products for the filling. The filling is my favorite: some hunting sausages, a slice of ham, cheese and vegetables. Boiled potatoes. Cut potatoes, sausages, ham, bell peppers and onions into small cubes. Rub the cheese on a coarse grater. Heat the pan over medium heat with a little vegetable oil.
  7. Cut the onion into small cubes.
  8. Fry the onions in a pan with vegetable oil until golden brown.
  9. Add finely chopped bell peppers, sausages and ham to the onion.  Stir and heat for 2-3 minutes.
  10. Then we send boiled chopped potatoes to the pan. We mix. Add salt and black pepper. Turn off the pan and leave the filling to cool.
  11. Knead the dough.
  12. Divide the dough into 10 equal parts and round. Cover the dough balls with foil and leave to rest a little (10-15 minutes).
  13. Add the grated cheese to the cooled filling. We mix.
  14. Roll out each dough bun into a small cake. Place a couple of tablespoons of the filling in the center of the cakes.
  15. We form buns-bags (pockets). First we wrap one edge of the dough around the filling.
  16. Then we wrap the other edge of the dough around the filling. We pinch the base of the “pockets”.
  17. Preheat the oven to 200 degrees. Leave the pocket buns on the rising table while the oven warms up (15 minutes).
  18. Mix the yolk with milk and grease the buns before baking.
  19. We bake buns-pockets with savory filling in the oven for 10-15 minutes.
  20. Cool the buns-pockets with smoked meats, potatoes, bell peppers and cheese on a wire rack
  21. Beautiful, fragrant and delicious buns-pocket.
