Ingredients

  • 120 g spahetti
  • 1 egg (s)
  • 4 garlic clove (s)
  • 0.5 ½ roll, stale, as breadcrumbs
  • Olive oil, plenty
  • Sea salt and pepper
  • 1 pinch (s) chili powder
  • Pecorino or other cheese, grated

Instructions

  1. For the Parmesan for the poor (parmigiano dei poveri), flatten an unpeeled clove of garlic and briefly toast with the skin in plenty of olive oil. Add the breadcrumbs and roast for a minute until light brown. Remove the garlic.
  2. In the meantime, cook the spaghetti al dente.
  3. Peel the remaining garlic, roughly chop it and briefly toast it in another pan in plenty of olive oil with chilli. Add a small ladle of cooking water from the pasta so that nothing burns. Add the finished spaghetti dripping wet, don`t put off!
  4. Mix the egg with the grated cheese and season with salt and pepper. Add the mixture to the pasta, add half of the breadcrumbs and mix. Stop heating the dish.
  5. Arrange the spaghetti and sprinkle with the remaining crumbs on the plate.
  6. Variation: You can also roast some anchovies with the garlic.
