- 6 slices wholemeal toast
- 400 ml soy milk (soy drink), vanilla flavor
- 4 tablespoon, heaped flour
- 0.5 teaspoon ½ salt
- 0.25 teaspoon ¼ cinnamon
- some oil for frying

- Mix the soy milk, flour, cinnamon and salt in a shallow bowl. Place the toast slices in the liquid and soak them completely on both sides. Fry the soaked bread slices in a hot pan with the oil on both sides.
- Optionally serve the poor knights with banana slices, maple syrup and vanilla soy milk.
