- Beat the eggs, whisk and season. Chop the tomatoes and spring onions into small pieces. Briefly turn the bread slices in the egg mixture and fry on both sides in a pan.
- Cover the finished bread slices with tomatoes and cheese and sprinkle with the spring onions.
