  • 4 tablespoon olive oil
  • 700 g potato (s), small, cut into 5 mm thick slices
  • salt and pepper
  • Parsley, finely chopped

Instructions

  1. Heat the oil in a large pan over medium heat. Add the potatoes and fry for about 15 minutes, until they are soft and golden brown, turning frequently so that they cook evenly. Salt and pepper the potatoes, drain on kitchen paper and place in a preheated bowl.
  2. Serve immediately sprinkled with parsley.
