Ingredients

  • 600 g raspberries, fresh or frozen
  • 500 g mascarpone
  • 100 ml coconut milk
  • 50 g desiccated coconut
  • 1 vanilla pod, scraped out pulp from it
  • vanilla sugar
  • Sugar, brown

Instructions

  1. If necessary, the raspberries are thawed in a sieve and spread out at the bottom in a baking dish or something similar. Glass is particularly pretty here because then you can see the layers.
  2. The mascarpone is stirred with the coconut milk, coconut flakes, vanilla pulp and vanilla sugar as desired and then poured over the raspberries. Finally, brown sugar is sprinkled over the cream, creating a sweet layer.
