Rassolnik with Canned Salmon

An unusual rassolnik with canned salmon is a soup that you will want to cook more than once.

Servings: 8

Ingredients

  • Canned salmon – 1 can
  • Pickled cucumbers – 3-4 pcs.
  • Rice – 0.5 cups
  • Potatoes – 3 pcs.
  • Carrots – 1 pc.
  • Onions – 1 pc.
  • Garlic – 1 clove
  • Tomato paste – 1 tablespoon.
  • Lemons – 1/2 pc.
  • Vegetable oil – 3 tablespoon.
  • Salt to taste

Directions

  1. Cut the carrot into strips.
  2. Cut the onion and cucumbers into small cubes.
  3. Cut the potatoes into medium cubes and put them to simmer in 2 liters of water together with the rice.
  4.  Fry the onions with carrots in vegetable oil in a frying pan.
  5. After the carrots and onions are done, add the tomato paste, cucumbers, and 0.5 cups of water, and stew them for 15 minutes.
  6. Send the contents of the frying pan to the potatoes and rice into the pot. Stir everything.
  7. Add the canned salmon and salt to taste.
  8. Before removing the rassolnik from the fire, add the finely chopped garlic and lemon zest.
