Ratatouille (Vegetable Stew) Instructions

  1. Let’s start by preparing vegetables. We need to bake bell peppers in the oven. To do this, I first peel it of the seeds so that, for simplicity, wash them underwater, and not pick out seeds from a soft, ready-made whole pepper. We send to the oven preheated to 200 degrees for 20 minutes. When the baked skin appears, the pepper is ready.

  2. Also for the sauce, you need to peel and peel the tomatoes. To do this, pour boiling water over them for a couple of minutes.
  3. Cut the peeled tomatoes into cubes. Then finely chop the onion and garlic. We put a frying pan on the stove, pour olive oil (2 tablespoons). First, fry the onion until transparent, and then add garlic to it, as garlic can burn very quickly. (Add as much garlic as you like it – it tastes bright.)
  4. Add chopped tomatoes to the onion and a little later basil, thyme, bay leaf.

  5. Pepper and chop finely. Add it to the tomatoes and leave to simmer a little more so that the water evaporates more. You can add some salt and pepper.
  6. Put in the form in which the ratatouille will be baked, first the peperad sauce, and on top of it – the vegetables cut into circles. Alternate them in any order.
  7. Grease the top with olive oil with spices, garlic, and herbs.
  8. We cover with a lid or foil and send to an oven preheated to 160-170 degrees to simmer for about 1.5 hours, after that we remove the foil or lid and leave for another 30 minutes – look when ready. On top, the vegetables should be slightly browned.
