Ingredients

  • 1 onion (s)
  • 2 chicken schnitzel
  • 1 red pepper (s)
  • 2 tomato (s)
  • 1 teaspoon vegetable stock
  • 1 teaspoon curry
  • 0.5 liter ½ coconut milk
  • Oil for frying
  • 150 g rice

Instructions

  1. Cook the rice grainy as usual.
  2. Dice the onion and fry in oil until translucent. Cut the chicken schnitzel into bite-sized pieces and fry them with them. Chop the peppers and tomatoes and add them to the pan. Add 1 teaspoon of vegetable stock, 1 teaspoon of curry and coconut milk. Let simmer for 10-15 minutes.
  3. Serve with the rice.
