- The recipe is well suited for consuming broken vanilla pods or older, hard pods. In principle, this is nothing more than rum candy, just matched to baking with significantly more vanilla than usual.
- Cut open the vanilla pods and fill a small bottle with sugar and rum. Shake it from time to time for the next few days so that the sugar can dissolve. The longer the rum-vanilla can steep, the more intense it becomes in taste.
- As with rum candy, you can always refill with rum and sugar, but you should add a new vanilla pod from time to time so that the aroma is retained.
- Once a year I buy a bag of broken vanilla pods from Madavanilla, so I get well over the year, even if it is relatively wasteful.
