Saute of Chicken, Zucchini And Tomatoes

Chicken fillet stewed with courgettes, tomatoes, onions and carrots is an easy dish that is most popular in summer. Cooking is easy, vegetables give chicken meat unique juiciness and bright taste. The calorie content of the dish is quite low.

Ingredients

  • Chicken fillet – 300 g
  • Young zucchini – 400 g
  • Bulb onions – 1 pc.
  • Carrots – 1 pc.
  • Tomato – 1 pc.
  • Salt – 1 teaspoon
  • Seasoning for chicken – 1 teaspoon
  • Vegetable oil – 2 tbsp
  • Parsley – 3-4 sprigs

Directions

  1. Prepare all food. Saute cooks quickly enough, so it’s very convenient to have everything at hand.
    Defrost chicken fillet if necessary.
  2. Cut the chicken fillet into large cubes about 2 by 2 cm.
  3. Cut the onions into cubes, carrots into cubes.
  4. In a heavy-bottomed saucepan or saucepan, heat the oil, add chicken pieces and onions. Fry the meat and onions over high heat for about 10-15 minutes, stirring.
  5. Add carrots and chicken seasoning to a saucepan, stir and cook for another 5 minutes.
  6. Meanwhile, cut the courgettes into cubes about 1.5 x 1.5 cm.
  7. Cut the tomato into cubes as well.
  8. Add zucchini and tomatoes to the saucepan to the meat, season with salt. Stir, reduce heat.
  9. Cover the saucepan with a lid and simmer the chicken with zucchini and tomatoes over low heat for 30-35 minutes. Do not add water, as the vegetables will produce juice and this will be enough.
  10. After the simmering time, add the chopped parsley, stir and turn off the heat.
  11. Serve sautéed chicken and vegetables as a separate dish. This surprisingly light and low-calorie dish tastes equally good hot or cold.
  12. Decorate the top with fresh parsley leaves. Help yourself!
