Sour Dough Yutaza

Yutaza is a national Kyrgyz dish that will appeal to those who love steamed dishes. Yutaza is prepared from yeast dough, which is greased with oil, rolled into tubes and steamed.

Ingredients

  • Wheat flour – 1.5 cups
  • Warm water – 0.5 cups
  • Dry yeast – 0.5 teaspoon
  • Salt – 0.5 teaspoon
  • Vegetable oil – 2 tbsp

Directions

  1. We prepare the necessary ingredients according to the yutase recipe from unpaired yeast dough
  2. Knead a unpaired yeast dough for yutase. Pour warm water into a bowl, add dry yeast and salt to it. Mix the ingredients.
  3. Sift wheat flour into a separate deep plate.
  4. Pour water with yeast and salt into the sifted flour.
  5. Knead the dough, which should come out elastic.
  6. We put the yeast dough for yutase in a warm place for 2-4 hours, covering it with a towel.
  7. Divide the risen dough into 4 parts.
  8. We stretch each piece of dough with our hands into a thin square or oval (for convenience, you can use a rolling pin).
  9. Lubricate the rolled dough with vegetable oil (pull it out by hand into a very thin layer).
  10. Roll the dough into a roll (in the form of a tube), pinch the edges.
  11. Steam the straws (15-20 minutes). If you don’t have a steamer, you can cook yutaz on a wire rack, set over a pot of boiling water and covered with a high lid.
  12. We serve ready-made yutaza for tea.
