Ingredients

  • 250 g spinach leaves, frozen
  • 125 g ham, (Katenschinken)
  • 250 g mushrooms
  • 6 egg (s)
  • 1 onion (s)
  • 1 clove garlic
  • salt and pepper
  • nutmeg
  • oregano
  • basil
  • Oil, for frying

Instructions

  1. First, put the not too finely chopped onions with the ham, diced and stew in a pan with a little oil.
  2. Now clean and slice the mushrooms and mix the finely chopped garlic with the onions and ham. Season to taste with salt, pepper and freshly grated nutmeg and let everything stew for about 10 minutes and then mix in the spinach leaves that have already appeared and season everything again after a few minutes with the spices.
  3. Now mix 3 eggs with a pinch of salt for each omelette in a bowl with a whisk, added a little basil.
  4. Heat some oil in a Teflon pan, pour in the egg mixture and distribute it. As soon as the mixture has hardened, take half of the spinach leaves from the other pan and spread over the egg mixture.
  5. I sprinkled some oregano over it and carefully put everything on a plate.
  6. You can also serve decoratively with lettuce, tomatoes, cucumbers etc. around it.
