Syllabab with Lemon and Lime

Syllabab is not girls power at all, but a traditional English dessert made from whipped cream, alcohol and various additives (in this recipe, lemon and lime). The name “syllabub” comes from the Sille champagne wine and the word bub – this is how sparkling wine was called in slang.

Ingredients

  • Juice of 1 lemon
  • 1/2 lime juice
  • Gin or vodka – 1 tbsp
  • Sugar – 4-5 tbsp
  • Fat cream, for whipping – 1 ¼ cup
  • Lemon and lime zest (for garnish)

Directions

  1. Wash the lemon and lime thoroughly (you can pour boiling water over them). Carefully cut the zest into thin strips (with a special zest knife, a vegetable peeler and just a sharp knife) or grate. Then squeeze the juice out of the citrus fruits.
  2. Mix lemon and lime juice, add sugar, gin or vodka (this differs this recipe from the classic one that uses wine). Stir to dissolve the sugar.
  3. Pour in the cream and whisk everything well until fluffy, stable.
  4. Place the sylabab in glasses and refrigerate for 30 minutes.
  5. Garnish with lemon zest. Serve the sylabab well with small, thin crackers.
