Ingredients

  • 300 ml orange juice, freshly squeezed
  • 0.5 ½ orange (s) or lemon (s), untreated, the grated peel
  • 2 egg yolks
  • 30 g cornstarch
  • 100 g suar
  • 125 ml cream
  • 30 g chocolate (dark)

Instructions

  1. Mix the orange juice and peel, egg yolk, cornstarch and sugar with the whisk. In a small saucepan, bring the liquid to a boil while stirring. Remove from heat and let cool in a water bath.
  2. Whip the cream very stiff, mix with the orange cream. Coarsely grate the chocolate. Arrange orange cream in portions in glasses, garnish with chocolate shavings.
  3. Tip: Refine with Grand Marnier.
