Tuna and Spinach Sandwich

This hearty and delicious sandwich is made with tuna, spinach, basil, and whole-grain bread.

Cook: 10 minutes

Servings: 4

Ingredients

Tuna, canned in water (drained) – 330 g
Spinach, small leaves – 1.5 cups
Whole grain bread (toasted) – 8 slices
For refueling:
Lemon juice – 3 tbsp
Shallots (finely chopped) – 2.5 tbsp
Capers – 1 tbsp
Olive oil – 1 tbsp
Ground black pepper – 0.5 teaspoon.
Dijon mustard – 0.5 teaspoon

Directions

In a small bowl, combine all the dressing ingredients and beat lightly with a fork.
Break the fish into small pieces, put in a bowl, add spinach, basil and pour over the dressing, mix well.
Put the salad on four slices of bread, cover with the remaining bread. Serve the sandwiches right away.
