Ingredients

  • 1 kg turkey meat
  • 100 g bacon
  • 1 onion (s)
  • 2 cloves garlic)
  • 0.25 ¼ bunch chives, fresher
  • 0.25 ¼ bunch parsley, fresher
  • 0.5 ½ pack feta cheese
  • 1 teaspoon, heaped pepper, colored grains
  • 1 teaspoon, heaped sea salt, coarse
  • 1 small egg (s)
  • basil
  • marjoram
  • rosemary

Instructions

  1. Turn the chilled turkey meat and bacon through the 4.5 mm disc of the meat grinder. Finely chop the onion and fry in a little oil, coarsely chop the garlic and grind in a mortar with the colored pepper, sea salt, basil, oregano, marjoram and rosemary. Mix well with the onions into the minced meat. Cut the feta cheese into very small cubes, finely chop the chives and parsley and mix well with the mixture by hand.
  2. Freeze the mass for about ½ hour before filling, this makes filling easier. In the meantime, water the intestines well with hot water.
  3. Then screw the appropriate sausage nozzle onto the meat grinder. Open up the intestines, tie a knot at the end. Pour the sausage mixture into the meat grinder and turn slowly and fill the intestines evenly. Turn off after approx. 15-20 cm and then continue filling. I have found that it works best with a helper.
  4. I think homemade grilled sausage is great, you can vary the spices and create your own taste.
  5. Then grill the sausage as usual. I haven`t tried freezing yet because I only make as much sausage as I need for grilling.
