When it`s really warm in summer and you need optimal cooling, there is nothing better than a light, refreshing sorbet. A long runner in summer is the watermelon and that`s why I thought that a simple sorbet made from watermelon would be the best way to cool off. The nice thing about this is that this sorbet gets by with very little additional sugar and the lime juice gives it a slightly citrusy note.
Ps: If you don`t have an ice cream machine, just take a roaster and freeze it beforehand. After the sorbet mixture has been made, put it in the cold roaster and freeze it again. The sorbet mixture is then pulled inwards from the edge of the roasting pan with a fork every 30 minutes and gently stirred. After 2 hours you should have creamy sorbet.
Ingredients:
• 1.2 KG watermelon (with peel)
• 40 ml of lime juice
• 1 tablespoon powdered sugar
Preparation:
1. The watermelon is cleaned and the pulp is pureed with the lime juice.
2. Now pass the watermelon through a sieve to filter out hard pulp residues and the stones.
3. Now push the powdered sugar through a sieve and stir in, here you can also adjust the amount of sugar.
4. Freeze everything in an ice cream maker or using the roaster method as described above.
