In a large bowl, combine flour, salt, cinnamon, and yeast. Add vanilla sugar and stir.
In a separate bowl, beat eggs, milk, honey, and vanilla extract.
In the center of the flour slide, make a depression and pour the egg mixture into it, mix with a whisk until smooth. Cover and set aside for 30 minutes.
Add butter to the dough in small portions, stirring well each previous portion.
Add coarse sugar to the dough, mix well, form a ball, put in an oiled bowl, cover, and refrigerate overnight.
The next day, form balls of 100 g from the dough.
Heat the waffle iron and grease with oil. Place one ball on each compartment, cover and cook the yeast waffles for about 3 minutes, or according to the instructions on the packaging for your waffle iron. Serve hot waffles.
