Yeast-Free Bread Sticks on Kefir

Excellent homemade breadsticks will be a great addition to first courses, to a large number of bright appetizers, and they are just great as an independent dish!

Ingredients

  • Wheat flour – 500 g + 1-2 tbsp for kneading
  • Fat kefir (room temperature) – 300 ml
  • Sugar – 0.5 teaspoon.
  • Fine salt – 0.5 teaspoon.
  • Baking soda – 0.5 teaspoon.
  • Cumin – 0.25 teaspoon.
  • Turmeric – 0.25 teaspoon
  • Paprika – 0.25 teaspoon
  • Olive oil – for working with dough

Directions

  1. The fat content of kefir should be high so that the sticks are softer. But if you use low-fat kefir, then in addition to the dough you will need to add 1 tbsp olive oil. The set of spices may be different, depending on your preference. Turmeric will give the sticks a delicate yellow color. Combine flour with salt, sugar, and spices (turmeric, paprika, and caraway seeds). Stir.
  2. Make a depression in the center of the flour mixture. Pour in kefir at room temperature (this is important!). Add baking soda directly to the kefir.
  3. Start kneading the dough with a tablespoon first. The dough will be very sticky.
  4. Then use your hands to knead the dough on the table for at least 10 minutes, saturating it with oxygen. The dough will still be sticky, but add flour only at the end of the kneading and quite a bit – then the dough will become “more obedient”.
  5. Turn on the oven to heat up to 180 degrees. To make the sticks about the same, divide the dough into equal parts. With your hands oiled with olive oil, form sticks by rolling the dough between your palms or rolling the dough with your palm on the table. I got 16 sticks.
  6. Place breadsticks in an oven preheated to 180 degrees for 30 minutes.
  7. Ready breadsticks must be removed and allowed to cool under a clean towel.
