Zucchini Casserole with Tomatoes and Cheese

I want to offer you a recipe for a zucchini casserole with tomatoes and two types of cheese, which in appearance resembles a pizza. Very tasty, juicy! It is eaten with pleasure, flies off the table very quickly!

Cook: 20 minutes

Servings: 6

Ingredients

  • Zucchini – 1.5 kg
  • Tomatoes – 1-2 pcs.
  • Cheese – 60 g
  • Suluguni cheese (or mozzarella) – 60 g
  • Ketchup – 2 tbsp
  • Yolk – 1 pc.
  • Dry basil – to taste
  • Oregano dry – to taste
  • Wheat flour – 90 g
  • Salt – 1.5 teaspoon
  • Sunflower oil – for lubricating the mold

Directions

  1. Grate the zucchini on a coarse grater. Add 1 teaspoon of salt. Leave to stand for 5-10 minutes.
  2. Squeeze the zucchini, drain the liquid. Add yolk, dry herbs, sifted flour, a pinch of salt. Mix.
  3. Grease the form with sunflower oil. I have a mold with a diameter of 26-27 cm. Spread the zucchini evenly over the mold and send them to an oven preheated to 170-180 degrees for 40-50 minutes. Cut the tomatoes into slices.
  4. Suluguni cheese (or mozzarella) cut into slices. Grate the cheese. Brush the baked squash base with ketchup.
  5. Top with suluguni cheese, tomatoes. Sprinkle with grated cheese. Send for 10-15 minutes in an oven preheated to 190-200 degrees.
  6. Zucchini casserole is ready. Very, very tasty! You can experiment with the filling! I like the type of pizza “Margarita”! Cook and taste.
