Ingredients

  • 250 g semolina (durum wheat semolina)
  • 250 g flour
  • 1 teaspoon salt
  • 200 ml water, lukewarm
  • 1 pinch (s) sugar
  • 20 g yeast

Instructions

  1. Mix the yeast, salt, sugar and semolina well. Add some water. Prepare a loose pre-dough and let it rest. Then add the flour. Always add a little water as needed, the dough must not be runny. Knead well, I`ll do it with the food processor.
  2. Shape the dough into a loaf, depending on whether you are using an electric pan or a regular pan. The electric ones are big, so you can form a flat cake, with normal pans the batter is enough for several loaves of bread. Dust the flatbread with semolina, then cover it well and let it rest for 15-20 minutes.
  3. Heat the pan. Grease the bottom of the pan with butter using a paper towel.
  4. Carefully bake the cakes on a low flame. Only turn when one side is done. It would be helpful to let the flatbreads slide out of the pan onto baking paper so that they stay in shape. The bread is tasty, filling and stays fresh for a long time.
