Banana and Kiwi Marmalade (on Agar-Agar)

Natural fruit marmalade on agar-agar, made from bananas and kiwi, is a healthy dessert that requires only a few ingredients and 20 minutes of free time to prepare. Try it!

Servings: 1

Ingredients

  • Bananas – 2 pcs. (340 g)
  • Kiwi – 2 pcs. (175 g)
  • Agar-agar – 10 g
  • Honey – 1-2 teaspoon (to taste)
  • Coconut flakes – 30-45 g
  • Lemon juice (optional) – a few drops

Directions

  1. Pour 40 ml of cold water over the agar-agar, mix and leave to infuse while preparing the rest of the components.
  2. Peel bananas and kiwi. Cut the fruit into random sized pieces and place in the blender bowl.
  3. Whisk the kiwi and banana for 2-3 minutes, until smooth and smooth.
  4. Place the banana and kiwi fruit puree in a saucepan.
  5. Bring the puree to a boil over low heat, stirring occasionally. During this time, the mass will slightly thicken and darken.
  6. Once the fruit puree is boiling, add the agar-agar. While stirring constantly, let the puree boil again. Boil for another 3 minutes.
  7. After turning off the heat, taste the mixture and add honey to taste. If the fruit is ripe and sweet on its own, you can also add a few drops of lemon juice to accentuate the sweetness of the fruit for a more versatile flavor.
  8. Line a small container with cling film. I used a 14×22 cm mold. Put the fruit puree with agar-agar and honey in a mold and smooth to a thickness of about 2 cm. You need to act quickly, as the mixture will thicken as it cools – the agar solidifies at room temperature.
  9. Place the marmalade mold in the refrigerator for a couple of hours to cool and freeze completely.
  10. Cut the chilled marmalade into pieces of the desired size. Dip each piece of marmalade in the coconut.
