Brazilian Banana Cake Ingredients

  • Egg – 2 Pieces
  • Vegetable oil – 75 Milliliters
  • Kefir – 100 Milliliters
  • Sugar – 150 grams (100 g – for dough, 50 – for crumbs)
  • Flour – 250 grams (175 g – for dough, 75 g – for crumb)
  • Butter – 45 grams (for crumb)
  • Baking powder – 0.5 Art. spoons
  • Vanilla – 1 Gram
  • Cinnamon – 0.5 Teaspoon (for crumbs)
  • Salt – 2 Pinches (1 pinch for dough, 1 for crumb)
  • Banana – 2 Pieces

Brazilian Banana Cake Instructions

  1. Prepare the sand crumbs: in a bowl, mix flour, cinnamon, sugar and salt. We cut cold butter, grind everything into crumbs with our hands and put in the refrigerator.
  2. Separate the whites from the yolks and beat at high speed until fluffy and dense. We send proteins to the refrigerator.
  3. Then beat the yolks and sugar for about 10 minutes. The mass will increase and brighten. Then add kefir, vegetable oil and vanilla. Mix everything well.
  4. Then we add sifted flour with baking powder to the liquid mass. Gently, slowly, mix the dough.
  5. Now it’s the turn of the whipped proteins. Gently add the proteins to the dough, mix with light movements.
  6. Put half of the dough in a mold lightly oiled with vegetable oil, and then place the bananas cut into circles. Sprinkle with half of the sand crumbs on top.

  7. Put the rest of the dough on top of the crumbs, then sprinkle with crumbs again.
  8. We send the form to an oven preheated to 180 degrees for 45-50 minutes. The finished pie needs to cool down a little, about 15 minutes – and you can serve it to the table.
