Ingredients

  • 600 g beefsteak tomato (s)
  • 1 medium onion (s)
  • 100 g feta cheese
  • 1 ciabatta
  • 1 glass pesto, green or red
  • 200 g mozzarella
  • 2 cloves garlic
  • 100 ml olive oil
  • 50 ml balsamic vinegar
  • some herbs, Italian
  • a bit salt
  • some pepper

Instructions

  1. Cut the beefsteak tomatoes into small cubes, removing the seeds. Also cut the feta and the onion into small cubes. Put everything together in a bowl.
  2. Now the dressing is prepared. Put the olive oil and balsamic vinegar in a beaker. Then press in the garlic cloves, 2-3 depending on the size, season with the herbs, salt and pepper and mix well.
  3. Pour the dressing over the tomato mixture, mix everything well, seal or cover the bowl and let everything stand for about an hour.
  4. Now cut the ciabatta in half and spread a thin layer of pesto on top. Spread the Bruschetta Speciale mixture on top, sprinkle with the grated mozzarella and bake in the oven at 180 ° C for about 10 minutes until the mozzarella is lightly brown and the ciabatta is crispy.
  5. A rocket salad tastes very good with it!
  6. A tip for oil and balsamic vinegar: If you don`t have such a precise measuring cup, simply fill half a cup with oil and balsamic vinegar in a ratio of 2: 1.
