Ingredients

For the dough:

  • 460 g flour
  • 40 g fresh yeast
  • 250 ml water, lukewarm
  • 10 g salt
  • 15 ml olive oil
  • 1 pinch sugar

For the filling:

  • 200 grams bacon
  • 1 kg minced meat, mixed
  • 6 egg (s)
  • 1 onion (s), sliced
  • 10 slices cucumber (sandwich cucumber)
  • 200 g cheddar cheese, rated
  • 100 g fried onions
  • 70 g tartar sauce
  • 70 g ketchup
  • 70 g BBQ sauce

Also:

  • 1 piece (s) egg yolk for brushing
  • 20 g sesame seeds for sprinklin

Instructions

  1. For the dough, mix the water with the olive oil, yeast, salt and sugar in a bowl until everything has dissolved. Now add the flour and knead everything into a smooth dough. Possibly add a little more flour or water. Let the dough rise at room temperature for about 1 hour.
  2. Then knead the dough together and leave it covered in the refrigerator (tea towel) for 24 hours.
  3. For the filling, fry the bacon in a pan and drain on kitchen paper. Fry the minced meat in the bacon fat, season with coarse pepper to taste.
  4. Fry the eggs with a little fat as fried eggs.
  5. Now divide the dough and roll out 1/3 of it as round as possible for the lid. Roll out the remaining 2/3 and line a prepared 28 cm springform pan with it so that the dough can hang over the edge of the pan.
  6. Now layer all the fillings in the pan: sauce, 1st half of the minced meat, bacon, onions, cheddar cheese, 2nd half of the minced meat, cucumber, eggs - until all the ingredients are in.
  7. Fold in the overhanging edge of the pastry and dab it with egg yolk. Now put on the pastry lid, brush with the remaining egg yolk and sprinkle with sesame seeds.
  8. Bake in a hot oven for approx. 20 - 25 minutes at 180 ° C top / bottom heat.
