Cantuccine Cookies with Nuts and Candied Fruits

Cantuccini (cantucci) – the most famous variety of the famous Italian biscotti biscuits (from Italian biscotti – “twice baked”). Cantuccine traditionally contains almond splashes. Surely, such a delicacy will appeal to your whole family and will quickly fly off the table!

Ingredients

  • Eggs – 3 pcs.
  • Sugar – 200 g
  • Candied fruits (or dried fruits) – 100 g
  • Nuts (almonds, walnuts, peanuts) – 130 g
  • Flour – 425 g + for working with dough
  • Baking powder – 1 teaspoon
  • Orange (zest) – 1 pc.
  • Salt – 1 pinch
  • Vanillin – 1 pinch

Directions

  1. We prepare the necessary ingredients. Sift the flour with baking powder and salt (you need 3⅓ cups of 200 ml of flour).
  2. Beat the eggs with a whisk with sugar and vanilla until the mixture turns white. The sugar must dissolve.
  3. Add flour in parts.
  4. Knead the dough.
  5. You can chop the nuts a little with a knife.
  6. Add nuts, candied fruits (or dried fruits) and orange peel to the dough (the orange part of the peel, removed with a fine grater).
  7. We mix all the ingredients into the dough. Preheat the oven to 160 degrees.
  8. Divide the dough into 2 parts and roll the sausages on a table sprinkled with flour.
  9. Transfer the “sausages” from the dough onto a baking sheet covered with parchment and slightly flatten. We send them to a preheated oven for 30 minutes.
  10. We take out the cantuccini cubes from the oven and let them cool down. Cut the cubes into oblique slices 1.5-2 cm thick.
  11. Put the cantuccine slices with nuts and candied fruits on the wire rack and put them back in the oven, preheated to 150 degrees, for 15 minutes.
  12. Let the cooked liver cool.
